What makes Val’s pudding unique you ask? Well..this version calls for butter and not suet, which gives a golden nutty character that gets lovelier with age. The recipe also requires Bundaberg O.P. rum (50% alcohol) so Val’s puddings pack a heady sting. They mature for 2 months so her Christmas puddings really taste like Christmas.
